Osteria Ristorante Italiano welcomes Chef Loris Pistillo


Loris Pistillo, the new Italian chef of Osteria Ristorante Italiano in Holiday Inn Golden Mile was born and raised in Milan, Italy. Growing up in a large, close-knit family, all sharing a profound appreciation for the culinary arts, Loris’s love affair with food began at the many holiday gatherings at his beloved grandma’s place. He fondly remembers her homemade pasta and the many aroma eminating from her kitchen. 

Graduating from the Hotel & Tourism Management Institute in Milan, Loris had the opportunity to cultivate his skills in some of the most prestigious hotels and restaurants in Europe, including the Hotel Royal Monceau in Paris.
In 2008, Loris began his journey in Asia, starting with prestigious establishments such as the Four Seasons Resort in Bali Jimbaran, the Grand Hyatt Bangkok, the Roppongi Hills Club in Tokyo and Mandarin Oriental Taipei. Loris also played a pivotal role in the opening the Four Seasons Hotel Seoul, where he further honed his culinary skills by venturing in the Pastry Department. In Hong Kong, he was in charge of all the Western Cuisine operations for the opening of the new Hong Kong Jockey Club Shan Kwong Road Clubhouse. 
Now as Chef of Osteria, he has prepared a new menu where he will blend classic Italians dish paired with a modern presentation, some of his signature dishes are Roasted Octopus with Potato and Leek Puree taggiasca olives, tomato confit, Roast Beef Salad “Tonnato” in Tuna and Capers Sauce, Hand-crafted Cavatelli with Sicilian Red Prawn bottarga, broccolini, Mezze Maniche, “Pastificio Mancini”, Asparagus, guanciale, pecorino, Braised Wagyu Beef Cheek in a Tuscan Red Wine and Black Pepper Sauce, and a sinfully indulgent Torta Cioca Dark Chocolate Ganache Cake with Mascarpone Foam all available in his tasting menu with wine pairing. 

The chef change is of significance for Hong Kong diners, as Osteria isn’t your average hotel restaurant but over the years has become one of city’s top Italian spots. On any given day of the week it’s full of action -- in the open kitchen, at the buffet table during lunch-time and around the cozy interior.
